To make the traditional cake of the 6th of January, you need:
- Two puffed pastries
- 125 grams of almond powder
- 125 grams of sugar
- 125 grams of butter (soft, unsalted)
- 2 eggs and 1 yolk
- A spoonful of rum (but it is not mandatory!)
- A porcelain charm!

Before starting, preheat your oven: thermostat 7/8 (180 degrees)
First Step: Mix the softened butter with the sugar to get an homogeneous and slightly frothy mixture.
Step two: Add the two whole eggs, the almond powder and the spoonful of rum if you want.
Step three: On a baking tray, unroll the pastry (leave the baking paper underneath) and pour the mixture until two centimetres from the edge. And put the charm inside.
Step four: Cover the second pastry. Glue the edges together with your fingers, then fold them up.
Step five:
With a brush or a kitchen towel, spread the yoke on the surface, then trace some lines on the top with a knife
Step six: Put it in the oven for twenty minutes. And enjoy ! Warm or cold, it’s good !
